Coconut Walnut Chickpea Pie

2 cups cooked chickpeas, drained and rinsed
1/4 margarine
4 eggs
2 cups dark brown sugar
1 cup coconut milk or cream
1 Tbsp vanilla
1 1/2 cups coarsely chopped walnuts
3/4 cup flaked coconut
1 9-inch deep-dish pie crust, uncooked

1. Preheat oven to 350 degrees F.

2. Puree the chickpeas in a food processor. Add the margarine. Add the eggs, one at a time, processing until the mixture is very smooth and creamy. Transfer the chickpea mixture into a mixing bowl. Add the dark brown sugar and coconut milk and beat until blended.

3. Stir in the walnuts and coconut.

4. Pour into the pie crust and bake in the preheated oven for 50-60 minutes or until knife inserted into center comes out clean. Serve warm with a little whipped cream or, even better, vanilla ice cream!
